Whether slow roasting a shoulder or grilling lean chops, we have a large selection of Pork products. Our butchers believe in sustainable practices and offer a variety of cuts to deliver the most from each animal. Using pork belly for a perfectly rolled porchetta, jars of lard for savory baking, fresh house-made sausages, beautifully tied festive roasts, and our in-house charcuterie program, pork is honored and revered behind the Gwen counter.
Loin Chops
Pork loin chops are cut from the back portion of the loin, from the last rib to the sirloin, and look just like a T-bone/porterhouse. The loin chops' lean meat is best suited to roasting or grilling, but is also great if left whole as a roast. Butterfly and stuff the chops for something different. For best experience, cut at least 1"thick.
